Lemon Chicken Recipe
Chicken breasts are packed with protein, low in fat, and make for a healthy meal. If you are in a hurry and want something healthy, this lemon chicken recipe is just for you. Enjoy!
Ingredients
3 tbsp. all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
4 boneless skinless chicken breast halves (4 ounces each)
2 tsp. olive oil
2 tbsp. lemon juice
1 medium chopped onion
1 tbsp. butter
1/2 tsp. dried thyme
1 cup chicken broth
3 tbsp. minced fresh parsley
Directions
1. Combine flour, salt, and pepper in a small bowl. Set aside 4 1/2 tsp. for sauce. Sprinkle the remaining flour mixture over both sides of chicken.
2. Coat a large nonstick skillet with nonstick cooking spray. Cook chicken in olive oil over medium heat for 7 to 9 minutes on each side or until juice is clear. Remove and keep warm.
3. Using the same pan, saute onion in butter until tender. Add thyme and the reserved flour mixture and stir until blended. Graduallty stir in broth and lemon juice. Bring to a boil. Stir and cook for 2 minutes or until thick. Serve over chicken. Sprinkle with parsley (optional).
