Breakfast Recipes for (Stomach Rhythm) Heartburn
The following heartburn recipes are designed to aid digestion for individuals whose heartburn is caused by abnormal stomach rhythm and emptying (antro-duodenal motility). (If you are sensitive to ginger or cinnamon, these recipes will more than likely cause a flare-up, so if you would like to try them, simply eliminate the spices. Tips: Healthy alternatives to popular ingredients are listed. You can find white whole wheat flour (a delicate, finely ground whole wheat flour) in the flour section of the supermarket. Spelt and Quinoa (pr. Keen-wah) flour and alternative sweeteners are available at health food stores or online. Bon appetite!

Recipe - Rolled Apple Pancakes: Yields 12

  • 2 cups white whole wheat flour or spelt or Quinoa flour
  • 2 - 4 tablespoons stevia, Lo Han or Zylatol (or sugar, if you prefer!)
  • 4 tsp. baking powder
  • ¼ tsp. cinnamon
  • 1 tsp. salt
  • 2 well beaten egg yolks
  • 2 cups milk
  • 2 Tbs. melted butter
  • 1- 1/4 cups finely chopped apple
  • 2 stiffly beaten egg whites

    In a large bowl, mix dry ingredients. In a small bowl, mix egg yolks and milk. Pour over dry ingredients and mix well. Stir in butter and apple. Fold in egg whites. Let stand for a few minutes.

    Measure 1/3 cup batter per pancake, and pour onto hot, buttered griddle. Spread evenly with spatula. (Add a sprinkle of chopped walnuts if you like!) Cook 2 to 3 minutes or until pancakes develop a bubbly surface and slightly dry edges. Turn and cook ‘til golden brown.

    Dot each with butter (sprinkle with confectioner’s sugar for an extra treat!) and roll up. Eat plain, or drizzle lightly with honey or real maple syrup, or use as dippers. Yum!

    Recipe - Apple Pie Pancakes: Yields 8

  • 1-1/4 cups white whole wheat flour or spelt or Quinoa flour
  • 2 tsp. baking powder
  • 1/4 tsp. apple pie spice
  • 1/8 tsp. salt
  • 1/8 tsp. baking soda
  • 1 beaten egg
  • 3/4 cup apple juice
  • 2 tablespoons honey
  • 1 tablespoon ultra light olive oil

    Mix dry ingredients in a medium mixing bowl. Blend egg, apple juice, honey, and oil in a small bowl. Pour over dry ingredients. Stir, leaving slightly lumpy.

    Pour ¼ cup per pancake, over hot buttered griddle. Cook 2 to 3 minutes or until pancakes develop a bubbly surface and slightly dry edges. Turn pancakes and cook ‘til golden brown.

    Top with dots of butter. Drizzle lightly with real maple syrup or honey.

    Recipe - Apple Ginger Crepes: Yields 16

  • 1 c. white whole wheat flour or spelt or Quinoa flour
  • 1 ½ c. milk
  • 2 eggs
  • 1 Tbs. ultra light olive oil
  • ½ tsp. crystallized ginger or ground ginger or ¼ tsp. ginger juice
  • ¼ tsp. salt

    Combine all ingredients in medium bowl and beat ‘til smooth.

    Lightly grease skillet or crepe pan and preheat. Remove from heat, spoon in 2 Tbs. batter, then return to heat. Cook ‘til golden brown on one side. To remove, invert pan over paper toweling. Grease pan periodically.

    Fill with cooked apples, peaches or pears. Roll up, or fold in half. Sprinkle with powdered sugar, or if your tummy allows, add a small dollop of fresh whipped cream. Delish!

    Recipe Tip: To spice up your favorite pancake recipe, simply add 1 tsp. of crystallized ginger or ground ginger, or ¼ tsp. ginger juice.

    Ginger Tea
    Instructions, by the mug: Boil fresh, filtered water. Slice (3 or 4) fresh ginger root medallions and place in mug. Pour hot water over the slices and steep 2 or 3 minutes until the aromatic ginger is infused, approximately 6-8 minutes. Like it stronger? Steep until the flavor sings. Add a touch of honey and/or lemon and thoroughly enjoy!
