Linguine with Bacon Recipe
A healthy makeover to a pasta dish that is flavorful and delicious. Very easy to make and guilt-free.
Ingredients
1 package whole wheat or whole grain linguine
1/4 lb. bacon, diced
1 onion, finely diced
1 1/3 cups chicken stock
3 tbsp. chopped fresh sage leaves
1/2 lb. baby spinach leaves
Salt and freshly ground pepper
Grated Parmesan cheese
Directions
1. Cook pasta according to package. In a large skillet over medium heat, cook bacon for approximately 5 minutes or until desired crispness. Add onion and saute until onion is tender (5 to 6 minutes). Stir in chicken stock and sage. Simmer for 1 to 2 minutes.
2. Add spinach and cook until spinach wilts. Salt and pepper to taste.
3. Toss linguine with sauce and serve sprinkled with Parmesan.
