Vegan Tacos
If you've adopted a vegan lifestyle, or are simply trying to add more vegan meals into your diet, it doesn't mean you have to give up eating tacos! Simply make your own tacos at home with a few simple and healthy ingredients. This will help you ensure the ingredients are vegan and keep the calories and sodium down too.

These vegan tacos call for some of the healthiest foods you can eat! Black beans are a great source of protein, fiber and folate. Regular consumption of black beans may also improve your digestive and nervous system. Avocados are a good source of healthy fats known as monounsaturated fats. And sunflower seeds are a healthy source of vitamin E, a nutrient that can help protect your skin.

This recipe is fast and inexpensive. To make your taco making even easier, try setting up the process buffet style. Set up all the ingredients on a table and let everyone make their own unique tacos. Have someone be in charge of toasting the tortillas and wrap them in a towel to keep them warm.

Vegan Tacos

1 can organic black beans
6 corn tortillas
1/4 cup raw sunflower seeds
1 avocado (sliced)
1/2 cup vegan cheese
Hot sauce (optional)

Start by toasting the raw sunflower seeds over medium heat on a medium sized skillet. Once the sunflower seeds are toasted to your liking, remove them from the heat and set them aside. Keep the skillet on medium heat. Next, warm the tortillas on the skillet until lightly browned. Remove the tortillas for the heat and you're ready to make your tacos! Start by sprinkling the vegan cheese on each tortilla. Then add two spoonfuls on black beans to each taco. Add a couple slices of avocado to each taco and sprinkle the toasted sunflower seeds on top. Add a little bit of hot sauce if you want a little spice in your tacos. Roll each taco up, and you're ready to eat!

For variations to this vegan taco recipe, try using kidney beans instead of black beans, add some sprouts or onions, and top them off with your favorite salsa. You can also easily turn these tacos into tostadas by baking them for a few minutes in the oven.
