Lemon Pie Cookie Recipe
There is probably nothing quite like a really delicious looking Lemon Bar to make me break my diet – but now that I have discovered these Lemon Pie Cookies it’s like a double jeopardy temptation.

Lemon Pie Cookies
Ingredients:
1 ½ cups flour
½ cups powdered sugar
¾ cup margarine, softened
3 eggs
1 ½ cups sugar
3 tablespoons flour
3 tablespoons lemon juice
Powdered sugar
Method:
Preheat oven to 350 degrees.
Mix the first 3 ingredients and pat into a 9x13x2-inch pan. Bake at 350 degrees for 20 minutes.
Mix the remaining ingredients and pour into the baked crust.
Bake ½ hour longer. Cool and cut into squares. Sprinkle with powdered sugar.
Yield: depends on the size of your squares.
If they don’t get all eaten immediately, put them in a lidded container in the fridge. However here’s what I’ve found really works when I make sweets – make a plate for the neighbors, pack a plate each for my husband and I to take to work to share and keep a few for lunches. Otherwise it’s just too tempting to have them around for very long.
Lip-Smacking Lemon Bars
If you think you can’t make these from scratch it is time to think again – these are so easy and taste amazing!
Ingredients:
Crust:
2 cups flour
¼ cup sugar
1 cup butter (softened)
Topping:
2 cups sugar
3 eggs
1 tsp. baking powder
2/3 cup lemon juice
¼ cup flour
2 grated lemon rinds
Method:
Preheat the oven to 350 degrees.
Cut first three ingredients together in large bowl using two knives, or a pastry blender.
Pat crust into 13" x 9" baking dish. Bake for 15 minutes till light golden brown.
When you have 5 minutes left on the clock it’s time to mix the topping ingredients- in a large bowl with a hand mixer.
Pour over crust, and bake another 20 minutes.
Cool: sprinkle with powdered sugar and cut into bars.
Yield: depends on how large you cut them…
I think lemon desserts always look so delicious on a blue plate – so when I go to thrift stores I always look to buy a pretty blue plate or two so I can put some of these yummy lemon treats on a paper doily and give them away to friends and neighbors. (So I don’t break my diet too much…)
I like to use a Zyliss Easy Grip Citrus Zesteravailable at Amazon.
