Veggie Pizza Recipe

Guest Author - Jennifer Murray

This recipe makes for a quick and delicious dinner.

Ingredients:

  • 1 1/4 cups finely chopped assorted fresh vegetables of your choice (broccoli, onions, mushrooms, peppers, etc.)
  • 1/4 tsp. salt
  • Dash of pepper
  • 1 container (4 to 5 oz) garlic-and-herb spreadable cheese
  • 5 whole wheat flatbreads (6-inch) or pita fold breads
  • 1/3 cup finely shredded sharp cheddar cheese

    Directions:

    1. Place vegetables in small bowl. Sprinkle with salt and pepper.

    2. Spread 2 tbsps. spreadable cheese over each flatbread. Top each with 1/4 cup vegetable mixture.

    3. Sprinkle with cheddar cheese. Cut into 6 wedges.
