This dish is a traditional dish in the villages of the Alpujarra Mountains just south of Granada. You can pair these potatoes with fried eggs or sausage for a great meal, or just eat them alone.
Papas a lo Pobre
Ingredients:
4 large potatoes, thinly sliced
1 green pepper, chopped
salt to taste
2 c olive oil
Method:
Soak the potatoes in water for about 20 minutes to remove the starch. Drain the potatoes.
Heat the olive oil in a large, deep frying pan.
Add the potatoes and season with the salt.
Fry on high heat for 5 minutes, turning the potatoes over once during the process. Add the sliced peppers, reduce heat to medium/low and cover.
Fry gently for 10 minutes, checking the potatoes occasionally so they do not stick too much to the pan.
Add more salt if desired and check the potatoes.
They should be soft, but some should be a little crisper. If they are not cooked, leave on heat for another 5 minutes.

Instead of frying potatoes, try baking them. Make sure to use cooking spray to prevent the potatoes from sticking to the pan. Also, if you prefer, try sweet potatoes.
