Klejner (Danish Christmas cookies)
12 egg yolks
4 whole eggs
2 1/2 c. sugar
4 tbsp. cream
1/8 lb. melted butter
7-8 c. flour
2-3 c. shortening, very hot

Beat eggs and sugar. Add cream and butter. Stir in flour to make batter very stiff. Chill overnight. Roll out in small batches. Cut dough, using pastry cutter into diamonds. Make slit in center of diamond and pull top down through slit, to make a bow. Cook in deep fat until golden brown 6-8 at a time. Cool on brown paper and sprinkle with powdered sugar. Makes 12 dozen.
