Crispy French Toast Recipe

Guest Author - Jennifer Murray

Eating healthy doesn't have to be boring and just because a food tastes good does not mean it's "bad for you." Try this healthy french toast recipe and see for yourself.

Ingredients
  • 1/2 cup egg substitute
  • 1/2 cup fat-free milk
  • 1/4 cup orange juice
  • 1 tsp. vanilla extract
  • Dash ground nutmeg
  • 12 slices day-old French bread (3/4 inch thick)
  • 1 1/2 cups crushed cornflakes

    Directions
    1. Combine egg substitute, milk, orange juice, vanilla, and nutmeg in a shallow baking dish. Add bread and soak for approximately 5 minutes, turning once. Coat both sides of each slice of bread with cornflake crumbs. Place bread in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray.

    2. Bake at 425 degrees Fahrenheit for 10 minutes, turn. Bake 5-8 minutes longer or until golden.
