Baccalà Fritte -- Fried Cod Recipe

This cod dish is a favorite memory of Christmas for many Italians and Italian Americans.

Ingredients

  • 2 pounds dried cod
  • flour, seasoned with salt and pepper
  • ½ cup olive oil

Directions

  1. Put cod in a large bowl and cover with cold water, plus 2”. Soak cod chilled, changing water 3 times a day, up to 3 days. Drain and chill until ready to use.
  2. Dredge cod with flour.
  3. Heat olive oil in skillet over medium-high heat.
  4. Add the cod and pan fry, 2 minutes on each side.
