Thanksgiving Leftovers
If you had a large Thanksgiving turkey and you have a not so large family, you probably have lots of turkey leftovers in your refrigerator. If you haven't already done so, remove all the turkey meat from the carcass. For the best cold turkey sandwiches, cut thin slices of white meat from the the turkey breast. Stack the slices, wrap in plastic wrap and refrigerate. When wrapped tightly in foil or plastic wrap or placed in covered storage containers, refrigerated turkey, potatoes and vegetable dishes will keep for up to 4 days. Stuffing and gravies can be safely kept for only about 2 days. |
For longer storage, leftover turkey can be frozen. Even if the turkey was originally frozen, the roast turkey meat can be safely frozen. Wrap it in plastic wrap plus heavy duty aluminum foil, freezer wrap or place it in freezer bags. For the best taste, use it within 2 to 3 months.
