Slo Cooker Meat Loaf
The Slow Cooker aka Crock Pot was designed with the busy cook in mind. You can put this meatloaf in your slow cooker before you leave for work and come home to your home smelling of the aroma of a delicious southern favorite; Meatloaf.

You will need:
2 pounds of ground chuck
1/2 cup bell pepper
1/2 tsp. of salt
1 can of rotel tomatoes (drain the juice)
1 egg, beaten
1/2 cup chopped onion
1 cup cracker crumbs
1 cup milk

In a large bowl, mix together all ingredients. Form a large ball and place in your crock pot. Shape the ball into that of a loaf. Don't forget the beaten egg! It is what binds your meat and keeps the shape of your loaf.

Set your crock pot for "low" and cook for 8 to 10 hours.

Your meatloaf should come out moist and delicious.

If you prefer, you can add potatoes to this dish and cook right along with the meatloaf. Take 4 small potatoes, quartered. Place them on all sides of meatloaf before the cooking process begins.

This is truly a one pot meal.

Slice the meatloaf from the crock pot and serve.

Hot dinner rolls will compliment your dinner.

You will need:
1 large box of Instant Banana Pudding.
2 bananas sliced.
20 Vanilla Wafers
Cool Whip

Follow the directions on the box of Banana Pudding.
Add sliced bananas.
Stir in 10 Vanilla Wafers and place the remaining cookies on top of the pudding.
Cover with cool whip.
Place in refrigerator to chill and set.
Serve in individual cups or glasses.
