Sandwich Spread Recipes for Thanksgiving Leftovers
Everybody loves Thanksgiving leftovers, especially the homemade rolls with turkey and ham. Here are three favorite quick and easy spreads that will make those sandwiches extra special. Cranberry Mayonnaise, Honey Mustard Spread, and Olive Pimento Spread all have 3 ingredients or less and can be mixed in less than 5 minutes. All three can be made several days ahead and refrigerated until ready to serve.
This spread is especially good with roasted turkey. Use any leftover cranberry sauce – jellied or whole berry; whole berry, however, is the best.
Makes about 1 1/4 cups
1/2 cup mayonnaise
2/3 cup whole berry cranberry sauce
Mix the mayonnaise and cranberry sauce well. Refrigerate.

The flavor of this spread can be changed by using different mustards. For those who like a spread with a bite, hot mustard is perfect; Dijon is a bit milder. Plain yellow mustard is also good. This is especially good on ham, and leftovers can be spread on chicken breasts, pork chops, or fish fillets before grilling.

1/4 cup mayonnaise
1/4 cup mustard
1/4 cup honey

This is a copycat sauce from the delightful Pal’s Diner in Grand Rapids, Michigan. They serve it on their hamburgers and cheeseburgers, but it’s also great on ham and turkey sandwiches. It’s easy and lasts for weeks in the refrigerator.
Makes about 1/2 cup
1/4 cup mayonnaise
1/4 cup sliced salad olives with pimentos, well-drained and chopped
1 tablespoon honey
Mix all ingredients well. Store in the refrigerator.
