Broiled Fish with Stuffing and BaconThis basic recipe is for making a traditional broiled fish with stuffing, using bread crumbs and topped with bacon. Fresh green and red peppers and onions are used to give flavor and color to the stuffing. Ideal fish for this recipe are trout, snapper and bass, although other favorite fish could easily be used. Baked Fish with Stuffing and Bacon 3 lbs. fresh fish steaks or fillets, cut into serving portions 2 cups fresh bread crumbs 1/2 small onion, chopped fine 2 strips bacon, fried crisp and crumbled fine 1 Tbsp red pepper, chopped fine 1 Tbsp green pepper, chopped fine 1 Tbsp parsley, chopped 1/4 tsp thyme 1/4 tsp savory 1/4 tsp pepper 1/4 tsp salt About 3 slices bacon, cut into strips the length of the fish fillets or steaks Preheat oven to 450 degrees using the broiler setting. In a mixing bowl, combine the bread crumbs, fried crumbled bacon, red and green pepper, parsley, thyme, savory, pepper and salt. Stir well to incorporate the ingredients. Place the fillets or steaks on a broiler pan that has been lightly oiled. Top each with some of the seasoned bread crumb stuffing evenly. Place a strip of bacon over the top of each fillet. Place in the oven on the second to the top rack and bake until the fish flakes and is opaque in color, and the bacon strips are cooked and crisped. Immediately remove from oven and serve.
