Coconut Meringue Cookies Recipe
Want to make a festive treat or gift? These cookies fit the bill. Just color them red or green and they will be perfect. Also these will work for all your cookie exchanges or dessert buffets.
As a gift, find a nice tin, bag or container and fill them up with goodies.
Serves: 20
Everyone will love these light and fluffy cookies, 50 calories each!
INGREDIENTS
1-1/2 cups sweetened shredded coconut
2 egg whites
1/4 tsp vanilla extract
Dash of salt
2/3 cup granulated sugar
Food coloring
DIRECTIONS
Beat egg whites and dash of salt until soft peaks form.
Gradually add in sugar while beating until peaks are stiff and glossy.
Fold in coconut and food coloring. Tint to desired color.
Drop by rounded teaspoon onto greased baking sheet.
Bake at 325 degrees F for 18-20 minutes, until set and slightly browned. Center will still be soft.
