Quick & Easy Recipes using Leftover Turkey
I hope you had a wonderful Thanksgiving. I know the days from now until Christmas will be filled with many things to do: shop, decorate for Christmas and put up the tree, etc. Cooking is probably not the first thing on your list! Your holiday leftovers can be a real timesaver. Here are some quick and easy ideas to use up that leftover turkey. Although the traditional Thanksgiving dinner is delicious, I like to use the leftovers in dishes that are very different so that my family doesn’t get tired of it. Enjoy!
While you're cleaning up the leftovers, make a Turkey Shepherd’s pie for tomorrow's dinner: Mix the leftover gravy with chunks of leftover turkey and drained leftover vegetables such as corn, carrots, peas, or whatever else you served at your Thanksgiving dinner. Transfer the mixture to a casserole dish; top with leftover mashed potatoes. Sprinkle the potatoes with cheese. Bake in a 350° oven for 20-30 minutes or until the cheese is melted and the turkey mixture is bubbly.
Chicken and Bowtie Salad: Simply use cut up turkey instead of the cooked chicken
Chinese Chicken and Corn Soup: this soup also calls for ham, which many families serve alongside the turkey at holiday time. If you’re craving something a little different from the all-American turkey dinner ingredients, this Asian flavored soup is delicious and is a perfect warmer in the cold weather. You can carry on the Asian theme by substituting leftover turkey for the pork in Quick Pork Fried Rice.
Mexican Chilaquiles can be put together in a flash, and are equally good with leftover turkey as with pork. To carry on the Mexican theme, you may want to prepare Quick Pozole and use turkey instead of pork. Turkey is delicious in this fun Mexican soup. You may already have some of the stir-in condiments leftover from your holiday relish tray or tossed salad.
