Watermelon and Fruit Recipes

It's Summertime here in Oklahoma and you can't beat ice cold watermelon to beat the heat! For a switch on tastes why not try these special recipes including watermelon for your next event? Love these!

Fruit Donuts

Ingredients:
watermelon slices shaped like pineapple rings
Pineapple rings
Peaches sliced into rings with pit removed
Cream Cheese
2 TBSP Milk
Sugar to taste
Vanilla to taste
Slivered almonds

Cut out donut shapes from 1 1/2-inch thick slices of seedless watermelon, pineapple and peaches. Sweeten cream cheese and milk with sugar and a touch of vanilla to taste. Frost half of the fruit slices and sprinkle with almonds. Add another layer of fruit slices and top with sweetened cream cheese. Sprinkle toasted slivered almonds and serve. These are great and refreshing!

Fruit Kebabs

1-inch cubes of seedless watermelon, pineapple, peaches and mango
grapes, strawberries and pitted cherries
Smoked turkey breast, cubed
Cheese, cubed
Kebab sticks

Cut fruit, turkey and cheese on kebab skewers. Chill until serving.

Watermelon Popsicle Recipe

Fresh Watermelon without seeds
Chunks of fresh fruit - try grapes, strawberries, peaches or kiwi fruit

Puree watermelon and pour into Popsicle molds.

Drop in chunks of fresh fruit, insert caps and place in freezer.
Serve when frozen.

Watermelon Snow Cones Recipe

Seedless watermelon
Vanilla yogurt
Sweetened coconut
Sprinkles
Ice cream cones or paper snow cone cups

Using an ice cream scoop, make balls of watermelon and place them in the freezer on a waxed paper-lined cookie sheet for no more than 1 hour. Remove from freezer and roll in vanilla yogurt and then sweetened coconut, and top with sprinkles. Place in an ice cream cone or snow cone cup and serve. Kids especially love these and why not get them involved in making them! What a great time they will have!


Watermelon Lemonade Recipe

6 cups watermelon cubes (seeds removed)
1/4 cup raspberries, strawberries, or blueberries (your choice)
1 cup water
1/3 cup sugar
1/2 cup lemon juice

Place watermelon, fruit of choice and water in container of electric blender, cover and blend until smooth. Strain through fine mesh strainer into pitcher. Stir in sugar and lemon juice until sugar dissolves. Refrigerate until chilled, about 1 hour. Serves four
