Shoyu Chicken Recipe for Luaus

One of my all time favorite dishes when growing up was shoyu chicken. This is a perfect dish for Hawaiian Luau's or any party. Soy sauce is the basic ingredient for this delicious dish and the sauces from one recipe to another vary widely.
You'll find Soy sauce in many roadside plate lunch stops or any restaurant in Hawaii and it's a local favorite! I enjoy using ginger and crushed pineapple in mine. Makes it a tasty treat.
Here are two recipes to start your taste buds on a journey! Serve this hot with rice or noodles and I'll be right over! :)

Shoyu Chicken Recipe #1

5 lbs Chicken thighs
3 cloves Garlic
Thumb-sized piece of ginger

Shoyu Mixture:
1 C Shoyu
1 C Catsup
3/4 C White sugar

Cooking Instructions:
Fill pot with enough water to cover chicken. Peel and cut ginger in half. Slice cloves in half. Boil chicken with garlic and ginger (about 30-45 minutes). Drain almost all the water from pot. Return pot to stove. Add the shoyu mixture and simmer on low for about half hour.

Shoyu Chicken Recipe #2

5 pounds of chicken thighs
1 1/2 cups brown sugar
2 cups soy sauce
2 cans chicken broth
1/4 cup white wine
1 can crushed pineapple
1/2 cup vinegar
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
2 Tbps Worcestershire sauce
chopped green onion tops
2 cloves garlic, crushed
1 tablespoons ground ginger

Wash and drain the chicken thighs.
Combine the sauce ingredients
Combine the chicken and the sauce in a large pot. Bring to a boil, cooking 30 minutes or until the chicken is tender.
Serve Hot with Rice or Noodles.
