Smashed Potatoes

Greek Salad

This is my favorite mashed potato recipe. If you don't like chunky potatoes, take out the hand mixer and smooth them out.

Ingredients

1-1/2 pounds red potatoes (about 9)
1/2 stick butter cut into 3 equal chunks
1/2 cup half-and-half or milk
3 tablespoons cream cheese
pinch of pepper
1/4 teaspoons salt


Instructions

1. Scrub potatoes clean, but do not peel them. Cook potatoes in water until fork tender, about 25 minutes. Drain potatoes.
2. Using a potato masher, mash the potatoes. Add the butter, milk, cream cheese, salt and pepper. Continue to mash and stir the potatoes until they are almost smooth. Only small chunks should remain.
3. Transfer to a serving dish and serve immediately.
