Strawberry Soup

Greek Salad

The first time I ever tried strawberry soup was at Caesar's Palace in Las Vegas and it was wonderful. This is a great recipe and makes good use of your garden fresh or store bought strawberries. Serve this at a luncheon, brunch or tea.

Ingredients

2 cups fresh strawberries or 2 10-ounce packages frozen
1-1/2 cups water
3/4 cups sugar
1 cup cranberry juice
8 ounce strawberry yogurt
mint leaves for garnish

Instructions

1. Blend 1/2 cup water and berries until smooth. Save 9 whole berries for garnish.
2. Put berry mixture in a large pan. Add sugar, remaining water and cranberry juice. Heat on high and bring to a boil.
3. Cool and whisk in yogurt.
4. Refrigerate until cold, about 2 hours.
5. Garnish with the whole strawberries and mint leaves.

Makes 9 servings
