Three Layer Picnic Sandwich Recipe
It’s faster and easier to make one large sandwich than to make several small ones, and this Three Layer Picnic Sandwich can be made the night before the picnic. It’s colorful and substantial. To save time, you can purchase round loaves at most grocery store bakeries; both the egg and ham salad fillings can be purchased at the deli. If you want to make your own, however, I’ve included easy recipes.

Three Layer Picnic Sandwich

1 round loaf of bread (if it’s soft, place it in a 350° oven for 10 minutes to crisp it up)
1/4 cup butter
2 cups Egg Salad Filling

1 3 oz. package whipped cream cheese
1/4 to 1/2 pound Deli Thin Oven Roasted Turkey Breast
1/4 pound thinly sliced havarti cheese
romaine lettuce, washed, dried, and separated into leaves

2 cups ham salad filling

Balsamic Marinated Tomatoes

2 Roma tomatoes, sliced
2 tablespoons balsamic vinegar
2 tablespoons olive oil
¼ teaspoon salt
1/4 teaspoon freshly ground black pepper
 
Slice the bread horizontally in half, then each half in half, making four layers. Spread the butter on all cut sides (none on top or bottom). Spread the egg salad on the bottom slice. Place the next slice on top and press to make sure it adheres. Spread half of the whipped cream cheese on this layer, then evenly layer the turkey and cheese, covering the entire slice. Top with tomato slices, then lettuce. Spread the remaining cream cheese on the underside of the next layer and place on top of the lettuce. Spread the ham salad on top of the bread slice, then place the top of the loaf over. Press down gently to make the layers adhere. Wrap and plastic wrap and refrigerate at least one hour.
 
To serve, cut into wedges.
 
Balsamic Marinated Tomatoes: Place the tomatoes in a bowl. Mix the balsamic vinegar, olive oil, salt, and pepper and pour over the tomatoes. Refrigerate at least one hour.
 
Egg Salad Sandwich Filling
 
8 Servings
 
6 hard boiled eggs, peeled
1/2 teaspoon salt
1 teaspoon yellow mustard
1 teaspoon lemon juice
1/2 cup salad dressing, such as Miracle Whip
1 to 2 tablespoons snipped chives
 
Place the eggs in the bowl of a food processor and pulse until chopped. If you don't have a food processor, mash or chop the eggs by hand. Add the remaining ingredients.
 
Ham Salad Sandwich Spread
8 Servings
 
8 ounces lean ham , cut into squares
1/4 cup sweet pickle relish
1/3 to 1/2 cup salad dressing, such as Miracle Whip
 
Put the ham in the bowl of a food processor and pulse with the metal blade until the ham is finely chopped. Transfer the chopped ham to a bowl; add the sweet relish and enough salad dressing to mix.
