Four Make Your Own Mix Recipes

Guest Author - Sandy Moyer

Hot Chocolate Mix

Preparation -
Mix all the ingredients together until well blended. Store in an airtight container at room temperature.

To make a cup hot chocolate, stir 1/4 cup mix into 1 to 1-1/4 cup boiling water.

Baking Mix (use instead of Bisquick®)

Preparation -
Mix the flour, baking powder, sugar, salt, and cream of tartar together until well blended. Add the non-fat dry milk and mix again. Using a pastry blender or two knives, cut in the shortening until it's thoroughly mixed into the other ingredients and the mixture is the consistency of cornmeal. Store in an airtight container, at room temperature, up to 3 months.

Use in recipes instead of a brand name baking mix. For basic biscuits, combine 2 cups baking mix with 1/2 cup water or skim milk. Mix just until the dry ingredients are moistened. Knead on a floured surface, turning over 8 to 10 times. Roll the dough to about 1/2" thick. Cut with a 2" to 2-1/2" biscuit cutter. Place on an ungreased baking sheet and bake in a preheated oven at 450° for 8 to 10 minutes or until the biscuits are golden brown.

Pancake Mix

Preparation -
Mix all ingredients together until well blended. Store in airtight container. Makes about 8-1/2 cups pancake mix.

To make pancakes with this mix - for 6 pancakes (or more depending on desired size)
Mix together 1 lightly beaten egg and 1 cup milk until well blended. Add 2 tablespoons melted butter or margarine and mix well. Stir in 1-1/4 cups pancake mix. Mix just until the dry ingredients are moistened. For each pancake pour several tablespoons of batter on a lightly oiled, hot skillet or griddle. Cook until golden brown on both sides, turning over one time.

Instant Oatmeal Mix

Preparation -
Mix all the ingredients together until thoroughly blended.

To prepare one serving of oatmeal - In a microwave safe bowl, mix 1/2 cup instant oatmeal mix with 3/4 cup water. Microwave on full power for about 2 to 2-1/2 minutes. Stir, then let stand for about 1 minute before serving.

Optional Additions -
Just before adding water and cooking a serving of oatmeal, stir in one or more of these ingredients
Add 1 to 2 tablespoons -
raisins
chopped dates
diced apples
chopped pecans
chopped walnuts
