Three Chicken Quesadilla Recipes
In addition to cooking for kids, quesadillas are a great meal to make with your kids. These are three different variations of chicken quesadillas to get your started!
Salsa and Chicken Quesadilla Recipe
Ingredients:
• 1 pack of boneless, skinless, chicken breasts
• 1 jar of your favorite salsa
• 1 bag of shredded cheese (any flavor combination)
• Sour Cream
• Cilantro (optional)
• Flour or Wheat Tortillas
Directions:
1. Pre-heat your oven to 350 degrees.
2. Cook the chicken on the stove top or grill (or use leftover cooked
chicken from your freezer).
3. Spray a pie dish or cookie sheet with a non stick cooking spray.
4. Place one tortilla on the cookie sheet.
5. Spread a layer of salsa over the tortilla.
6. Sprinkle a layer of cheese over the salsa.
7. After the chicken is cooked, cut into bite size pieces, or place in a food processor until chopped finely.
8. Spread the chicken on top of the cheese.
9. Add a final layer of salsa, topped with some cilantro if desired.
10. Place the second tortilla on top, and bake in the oven for ten to fifteen minutes or until cheese has melted and the tortillas are just beginning to brown.
11. Cut the quesadilla into individual servings.
12. Serve with sour cream and extra salsa on the side.
Barbeque Chicken Quesadilla Recipe
Ingredients:
• 1 bottle of your favorite barbeque sauce
• 1 package of shredded cheddar cheese
• Flour or Wheat Tortillas
Directions:
1. Pre-heat your oven to 350 degrees.
2. Cook the chicken on your stove stop or grill.
3. After the chicken cooks, cut into bite size pieces.
Buffalo Chicken Quesadilla Recipe
Ingredients:
• Shredded or finely chopped cooked chicken
• 1 bottle of your favorite wing sauce
• Flour or Wheat tortillas
• Ranch or Blue Cheese dressing
Directions:
1. Pre-heat the oven to 350 degrees.
2. Spray a pie dish or baking sheet with a non stick cooking spray.
3. Place one tortilla on the baking sheet.
4. In a large bowl, combine cooked chicken with your favorite wing sauce.
5. Place the chicken mixture on top of the tortilla.
6. Top with the second tortilla.
7. Bake for five minutes, or until tortillas begin to brown.
8. Slice the quesadilla into individual servings.
9. Serve with Ranch or Blue Cheese dressing on the side.
