Taco Tuesday Recipes

Has Tuesday night gotten a little boring at your house? Throw your own Taco Tuesday dinner! Any basic taco dish will do, but try out the recipes below to spice up Tuesday even more.



Amped Up Taco Salad

Ingredients:


1 lb ground beef
1pkg taco seasoning
3/4 cup water
1/2 head iceberg lettuce
2 ripe tomatoes
1 bag Fritos corn chips
4 cups shredded cheddar cheese
2 green onions, sliced
1 bottle catalina dressing

Fry and drain 1 pound of ground beef.
2 Put beef back in pan and add taco seasoning and water.
3 Cook until no longer watery.
4 Chop lettuce
5 Dice 2 tomatoes.
6 Put all ingredients in a large bowl.
7 Add Fritos
8 Add shredded cheddar cheese.
9 Add green onion.
10 Add regular bottle Catalina French Dressing.
11 Mix well and serve

Taco Casserole

1lb ground beef
1(1 1/4 ounce) package taco seasoning
1(15 ounce) can refried beans
2cups monterey jack cheese, divided
1cup salsa
2green onions, chopped
1(2 1/3 ounce) can sliced black olives
1tomato, chopped
2cups corn chips, coarsely crushed or chopped



1 Brown ground beef and drain.
2 Add taco seasoning and water. Cook accordingly.
3 Put corn chips on bottom of 8x8" dish.
4 Heat refried beans.
5 Add 1 cup cheese and 1 cup salsa. Stir until combined.
6 Pour beans over corn chips in dish.
7 Add beef to top of beans.
8 Sprinkle remaining cheese over top.
9 Sprinkle green onions and black olives over cheese.
10 Bake in a 375 degree oven until the cheese is sufficiently melted.
11 Take out of oven and sprinkle chopped tomatoes on top. Wait 1-2 minutes and then serve.

Taco Soup

1 lb ground turkey
1 (1 ounce) package ranch dressing mix
1 cup frozen corn
1 (10 ounce) can Mexican-style stewed tomatoes, with liquid
1 (15 ounce) can tomato sauce
1 large onion, chopped
1 (1 1/4 ounce) package taco seasoning mix
1 (15 ounce) can black beans, rinsed
1 (15 ounce) can cannellini beans, rinsed
2 cups water



1 Brown meat and onions, drain off any grease.
2 Mix water, ranch dressing mix and taco seasoning into meat.
3 Drain and rinse beans, add to meat along with all other ingredients.
4 Cover and simmer for 45 minutes.
