Lemon Pepper Chicken Recipe
Lemon Pepper Chicken
Vegetable cooking spray
1 teaspoon olive oil
1 teaspoon of butter
4 skinless, boneless chicken breast halves (4 oz. each)
1 1/4 teaspoons lemon-pepper seasoning
1/4 cup canned reduced-sodium chicken broth
Coat a large non-stick skillet with cooking spray; add
oil, and place over medium-high heat until hot. While
skillet heats, sprinkle both sides of chicken evenly
with lemon-pepper seasoning. Add chicken to skillet,
and cook 4 to 5 minutes on each side or until chicken
is done.
Transfer chicken to a serving platter, and keep warm.
Add broth to skillet, cook, stirring
constantly, 1 minute or until slightly thickened. Spoon
sauce over chicken.
Yield: 4 servings
