Coconut Cookies

Greek Salad

Soft and chewy, these cookies are a family favorite. Make a big batch and freeze them to have on hand for unexpected guests. They also make a great homemade gift placed in a decorated tin.

Recipes for a multitude of cookies that makes baking them a year-round delight.

Creative Cookies
Wow your guest with these beautiful and fancy cookies.

Ingredients

3 large egg whites
1/8 teaspoon salt
1 teaspoon flour
1 teaspoon vanilla
1/2 cup light brown sugar
1-1/2 cups shredded coconut (about 1 large bag)
1/3 cup granulated sugar

Instructions

1. Preheat oven to 325F.
2. Lightly butter and flour a cookie sheet.
3. In a medium bowl, beat the egg whites and salt until soft fluffy peaks form. Start at low and increase to high.
4. Add 1 tablespoon of sugar and mix the whites for 2 minutes until thick and glossy.
5. In another bowl, combine the coconut, remaining sugar, brown sugar and vanilla. Mix well.
6. By tablespoonfuls, gently fold in the egg mixture into the coconut mixture until all is blended. Do not over mix!
7. Drop the mixture by heaping teaspoons onto the cookie sheet and bake for 12-15 minutes until golden.
8. Remove from oven and let sit for 5 minutes. Gently transfer cookies to a wire rack and cool.

Makes 1 dozen
