Oriental Beef & Broccoli

Oriental Beef & Broccoli

  • 1 lb. sirloin steak, partially frozen
  • 1 T. vinegar
  • 1 T. soy sauce
  • 2 T. light brown sugar
  • 1 garlic clove, minced
  • 1 cup thinly sliced carrots
  • 1/4 cup chopped red bell pepper
  • 6 cups fresh broccoli flowerets
  • 2 tsp. cornstarch
  • 1 T. water

Preparation -
Slice the steak across the grain into thin strips, about 1-1/2 to 2" long. Set aside. In a 2-1/2 to 3 quart microwave-safe casserole, whisk the vinegar, soy sauce, brown sugar, minced garlic, and bell pepper together.Stir in the steak strips. Cover and let stand for 10 minutes. Cook on full power for 3 to 5 minutes or till meat is no longer pink, stirring once or twice minutes. Remove the steak strips, leaving the liquid mixture in the casserole. (Use a slotted spoon to do this) Wrap the steak in foil to keep warm; set aside. Add the carrots and chopped bell pepper to the liquid in the casserole. Cover and cook on full power for about 2 minutes. Add the broccoli flowerets. Cover and cook on full power for about 6 to 8 minutes or until the more or till vegetables are tender-crisp, stopping to stirring about every 2 minutes. Whisk the cornstarch and water together; stir the mixture into the vegetables. Cook on full power, uncovered, for about 2-1/2 minutes or until the sauce is slightly thickened, stirring about half-way through. Stir in the steak. Cover and cook on full power for about 1 minute or until the steak is heated through.
