Brown Edged Lemon Wafer Recipe
There is nothing like those pale browned edged lemon wafers we used to eat as children with tall glasses of milk.
Adults will enjoy these same lovely wafers served with tea or even a glass of sherry.
Ingredients
1-1/2 cups flour
1 cup butter
1 cup sugar
2 eggs, beaten
1-1/4 tspn pure lemon extract
1/4 tspn. salt
Directions
Preheat oven to 375 degrees.
Mix butter and sugar together in a large bowl and beat until creamy smooth. In separate bowl whisk or beat eggs until fluffy. Add Lemon extract to eggs, then pour eggs into butter mixure and mix well. Add flour and salt and beat by hand until batter is smooth and creamy textured.
Grease or spray large cookie sheet, drop dough onto sheet at least 1-1/2 inches apart. Bake for 5 to 7 minutes until edges are brown. Watch oven at all times. Baked cookies will be pale in center and browned around the edges. Remove cookies from oven and gently place on wire cooking racks. Makes about 2 dozen cookies.
Good served with hot or iced tea, lemonade or vanilla ice cream. And of course, a frosty glass of milk.
