Basic Curry Recipe

You my want to double this recipe and freeze. Use one batch for shrimp curry and one for curried ground beef.

1 large while onion, dice in fairly large pieces
2 large tomatoes, medium slices
1 heaping tblspn curry powder
Salt to taste
Oil for cooking.

Use one pound of any of the following: ground beef; thinly sliced beef, chicken strips or deveined shrimp; fish chucks or julienned vegetables. Cook ground beef, sliced beef and chicken to almost done.

Heat a small amount of oil in pan and add your chosen ingredient to basic curry mixture and cook until tender and almost dry. 3/4 cups of water for more gravy. Serve over rice*

Hint
*Try a short or medium grain rice. Both are a little stickier than long grain rice, they absorb flavors a little better.
