Burma isn’t a destination that many of us are familiar with, and most are even more unfamiliar with Burmese food. Desmond Tan and Kate Leahy have released a cookbook that will change all that - Burma Superstar: Addictive Recipes from the Crossroads of Southeast Asia. Not only does this beautiful cookbook introduce us to the food of Burma (now officially named Myanmar), but it covers the culture, the people, and the actual restaurant, Burma Superstar, which is located in San Francisco.
Burmese food is influenced by many nations, including India and China. There are curries, soups, salads, noodle and rice dishes which range from mild to fiery. A curry lover, I tried the Coconut Chicken Curry first; yum! The fish curry was great, too, and there are several chicken dishes in the book in my queue. There is a recipe for Coconut Rice, which is very simple, but very good and it goes well with curries and stir-fries. I was especially impressed with the mouthwatering salads with simple dressings, and the recipes for pickles and condiments to go with the fabulous dishes. Shan Noodles were a big hit, and it was quite fun (and not time consuming – they were easy) to make the Pickled Mustard Greens to accompany them.
Besides good recipes, the photography in this cookbook is phenomenal. The photographers were able to capture not only the way the dishes should look, but also the countryside and the people. This cookbook is so beautiful, it’s suitable for a coffee table book.
There are explanations of ingredients – what they are, how to use them, and where to buy them. There are suggestions for pots, pans, and equipment which are helpful in making this incredible food, as well as a comprehensive index. Cookbook collectors will definitely want to add this to their collections.
