My first introduction to the popular Vietnamese soup, Pho, was at a favorite restaurant in Honolulu called Pho One, where they brought a large plate of greens – herbs like basil and mint, as well as bean sprouts, carrots, and lots of other add-ins. I was clueless as to how to eat my Pho, and I had to watch the other diners eat theirs while my soup cooled. Although I thought I had previously mastered the art of using chopsticks, I found I wasn’t skilled enough to pick up some of the small add-ins, and I decided that next time I’d ask for a table in the corner where others couldn’t see me eat.

The Pho Cookbook: Easy to Adventurous Recipes for Vietnam's Favorite Soup and Noodles is a cookbook that I wish had been available years ago. Not only does it include dozens of recipes for different types of Pho, it also includes accompaniments, sauces, and side dishes. Most importantly, it has a section on how to pronounce Pho, how to eat Pho and avoid “Pho Faux Pas,” the ingredients in Pho and where to purchase them, as well as interesting articles on the history of Pho and facts about Pho. After reading this book, and trying several recipes that were easy to follow, picture perfect, and delicious – Wok-Kissed Beef Pho, Pho Fried Rice, Cashew, Coconut and Cabbage Salad, and Saigon-Style Beef Pho – I decided that Pho is not only very trendy, but also something to serve both family and guests. It is fun to put platters of add-ins in the center of the table and watch and laugh at ourselves as we struggle to get hold of the tasty bits with our chopsticks. Incidentally, speaking of Pho, there are two meanings: the soup, and noodles, so eating Pho doesn’t always mean a bowl of hot soup.

Highly recommended, The Pho Cookbook: Easy to Adventurous Recipes for Vietnam's Favorite Soup and Noodles has beautiful pictures, decadent recipes, and plenty of fascinating information. This is one book most cooks will use over and over.
