Chai Pecan Blondies Recipe
A “blondie” is a delicious dessert very similar to a brownie but without the dark chocolate color (although chocolate chips may be added to blondies). But believe it or not, there are times when I actually prefer a blondie to a brownie simply because blondies can offer so much more in the way of exciting & bold flavors. Brownies are fantastic, don’t get me wrong here, but the main ingredient is chocolate & therefore – chocolate takes center stage (which is great if you are seriously craving chocolate!). But what if for some rare reason, you are not really in the mood for chocolate – what is one supposed to do? Well, the answer is pure & simple my friend – try my sinfully delicious Chai Pecan Blondies ☺.
My Chai Pecan Blondies are always a hit with both kids & adults alike. In fact, they are basically long gone after just being made. They sweet treats are decadent & delicious, I promise – you wont miss the chocolate at all ☺.
CHAI PECAN BLONDIES
Ingredients:
2 cups all-purpose flour
½ tsp baking powder
1 tsp ground cinnamon
½ tsp ground ginger
½ tsp ground allspice
¼ tsp ground cloves
¼ tsp ground nutmeg
¼ tsp ground cardamom powder
pinch of ground coriander powder
pinch of salt, to taste
2 tbsp strong chai (brewed Indian tea without milk/sugar)
½ tsp vanilla extract (or coconut extract)
½ cup unsalted butter, softened at room temperature
1½ cups light brown sugar, firmly packed
2 large eggs
1 cup cinnamon chips (or white chocolate chips or butterscotch chips)
½ cups toasted pecan pieces (or walnuts, cashews, macadamias, pistachios…)
METHOD:
Preheat the oven to 350 degrees F. Lightly butter & flour a 9x13” baking pan, set aside until needed.
Over a large mixing bowl, sift together the all purpose flour along with the baking powder. Then add in all of the spices (ground cinnamon, ground ginger, ground allspice, ground cloves, ground nutmeg, ground cardamom powder, ground coriander powder & salt), mix well to combine all of the dry ingredients together. Set aside until needed.
In another large mixing bowl, combine the chai with the vanilla extract. Next, add the softened butter along with the brown sugar & using an electric mixer – beat the mixture together for about 2-3 minutes until light & fluffy. Then carefully, add in the eggs (one at a time) & mix until well combined. Now gradually add in the dry ingredients (flour & spice mixture), keep beating until you have a thick, smooth & well combined batter. Lastly, using a spatula – fold in the cinnamon chips & the pecan pieces.
Now transfer the blondie batter into the prepared baking pan, making sure to spread it evenly. Then bake on the center rack of your oven for about 30-40 minutes until a toothpick inserted in the center comes out clean. Let the blondies cool completely before eating & enjoy!
VARIATIONS:
Feel free to add your favorite ingredients to the blondie batter – such as ½ cup of coconut flakes. My son likes to drizzle the top of these blondies with a little melted chocolate ☺.
