If you’ve ever been in a real German bakery, or better yet, spent time in Germany and sampled their incredible bakery items, you know that nothing can compare to the real thing. Classic German Baking: The Very Best Recipes for Traditional Favorites, from Pfeffernüsse to Streuselkuchen by Luisa Weiss, will enable bakers everywhere to prepare authentic German baked delights in their home. There are recipes for both sweet and savory baked goods, such as the classic Bienenstich and Sachertorte.
The first recipe I tried, Kase-Kummel Brotchen- Caraway-Cheese Rye Rolls, I adapted to my automatic bread machine to save time. The end result was incredible, and tasted like some rolls I sampled a few years ago in a Frankfurt Bakery. Weiss’ Bienenstich is the best I’ve ever had, and her step-by-step instructions for soft pretzels make it possible to duplicate those authentic pretzels served in Germany (no mall chain so-called pretzels which are simply roll dough made to look like pretzels – these are the real thing and not really difficult to make). There are strudels, cakes, cookies and bars, and tarts, both sweet and savory. There is also a recipe for homemade quark, which can be used in several recipes, and is difficult to find ready-made. My queue for recipes I plan to try from this book is growing, and this book is one that I plan to reference often.
Weiss’ recipes and instructions are clear and succinct, making it possible for almost anyone to turn out German baked goods that are picture perfect. Incidentally, the pictures in the book are excellent, and the most difficult thing will be to decide what to bake next. This beautiful book is highly recommended for anyone who is serious about baking and wants to duplicate baked goods that are sold in real European bakeries.
