Easy Turkey Tortilla Soup Recipe
Leftovers are inevitable after a huge Thanksgiving or Christmas feast, and everyone seems to love eating leftover turkey sandwiches for a day or two. But after that, the leftover turkey will sit in the fridge. Using up that turkey sometimes takes a little imagination, since most are sick of it and want some real food that doesn’t resemble that holiday dinner. Since nights are often cold during the holidays, warm soup is welcome. Turkey Tortilla Soup is an adaptation of a favorite soup from a friend, Debra Klotz, who makes hers with sautéed chicken breasts.
This yummy soup doesn’t resemble any component of the holiday dinner, and will be eaten without complaint or even any knowledge that it is made with holiday leftovers. You will, in fact, find yourself in the future making extra turkey or chicken just so you can make this quick and easy soup. Since most are busy during the holidays, it will be nice to prepare dinner less than 30 minutes.
8 Servings
1 tablespoon vegetable oil
1 green bell pepper, seeded and chopped
2 cups chopped onion
1 cup chopped celery
1 tablespoon fajita seasoning, or taco seasoning
1 4 oz. can diced mild green chilies
1/2 to 1 cup medium salsa
2 10 3/4 ounce can condensed cream of chicken soup
3 16 oz. cans low sodium chicken broth
1 teaspoon cumin
2 to 3 cups cooked turkey, cut into 1/2" cubes
1 bunch fresh cilantro, chopped
Condiments

sour cream
salsa
lime wedges

- Heat the vegetable oil in a large soup pot.
- Add the bell pepper, onion, and celery; sauté until tender stirring occasionally.
- Whisk in the fajita seasoning, green chilies, salsa, cream of chicken soup, chicken broth, and cumin.
- Bring to a boil and let cook 10 minutes.
- Stir in the turkey, continue cooking for 10 minutes, and sprinkle with the chopped cilantro.
- Serve with the condiments of your choice.
