Fried Red Rice with Chicken and Vegetables Recipe

1½ cups of cold left over red jasmine rice (To learn about red jasmine rice click here.)
1 boneless skinless chicken breast (10oz)
1/3 cup frozen shelled edamame
1 tsp pre chopped garlic
1 inch piece of fresh ginger
¼ of a small white onion
1 large carrot
1 large stalk of celery
3 tbsp oil (vegetable, peanut or olive – if using olive keep heat on medium to med-high)
1 tbsp soy sauce
Salt for seasoning
  1. Remove as much fat from the chicken as possible and then dice it. Sprinkle it lightly with about 1/8 tsp of salt and set it aside.

  2. Next, using a fine mesh strainer, run warm water over the edamame until it is defrosted. Then drain it thoroughly and pat it dry and set it aside.

  3. Peel the ginger and then dice it.

  4. Peel the onion and dice it.

  5. Peel the carrot and then slice it into rounds. Then cut the rounds in half and place them with the other vegetables.

  6. Rinse the celery and then dry it thoroughly. Cut off the ends and discard and slice the remaining stalk.

  7. Next start cooking by first heating a wok or large non-stick pan on high.

  8. Once it’s hot add 1 tablespoon of oil and let it get hot, swirling it around the wok to coat the sides.

  9. When the oil is hot add in the chicken and stir fry it for about 5 minutes or until it is lightly browned and cooked through. Then remove it from the wok and set it aside on a plate.

  10. Then add another tablespoon of oil and let it get hot.

  11. Once hot, add the onions and lightly sprinkle them with salt. Stir fry them for 40 seconds.

  12. Then add the carrots, celery and ginger and again sprinkle everything with a little salt and stir fry for another 30 seconds.

  13. Next stir in another tablespoon of oil and then add the garlic, chicken, and edamame. Sprinkle everything with a little salt and stir fry for 1 minute.

  14. Then add the cold rice, making sure to break up any lumps before adding it in, and stir fry everything for 30 seconds.

  15. Then add the soy sauce and stir fry another 30second to a minutes, or until everything is hot and mixed through. Then remove it from the heat and serve immediately. This makes about 3 servings of fried red rice with chicken and vegetables, enjoy!
