Pan Fried Flounder with Hot Bean Sauce Recipe
3 medium flounder fillets (skinless)
4 green onions
½ tsp salt
½ cup all purpose flour
3 tbsp vegetable oil
Sauce Ingredients:
1 inch piece fresh ginger
1 garlic clove
2 tsp cornstarch
1 tbsp peanut oil
2 tbsp hot bean paste
2 tbsp soy sauce
1 tbsp Shao hsing wine
2 tsp salt
1 tsp sugar
1 cup cold water
4 green onions
½ tsp salt
½ cup all purpose flour
3 tbsp vegetable oil
Sauce Ingredients:

2 tsp cornstarch
1 tbsp peanut oil
2 tbsp hot bean paste
2 tbsp soy sauce
1 tbsp Shao hsing wine
2 tsp salt
1 tsp sugar
1 cup cold water
- First prepare the sauce. Peel the ginger and dice it.
- Then peel the garlic by lightly smashing it with the side of a knife and then dice it.
- In a small cup mix the cornstarch with a little water, just until it dissolves and then set it aside.
- Next heat a wok on high and let it get hot. Once hot add the oil and let it get hot.
- When the oil is hot add the ginger and let it cook for about 30 seconds or until fragrant.
- Then add the garlic and the hot bean paste and stir for about 20 seconds, or until thoroughly mixed with the ginger.
- Then add the soy sauce, Shao hsing wine, salt, sugar, and water and let this come to a boil.
- Once it boils turn the heat down and let it simmer, stirring frequently until it reduces to a little more than half.
- Then add the cornstarch mixture and stir continuously until the sauce is slightly thick. Then turn off the heat and let this sit while preparing the fish and other ingredients.
- First rinse the green onions, thoroughly dry and then dice them. These are going to be used for garnishing the fish.
- Rinse the fillets under cold running water and dry them thoroughly. Then sprinkle each side with the salt and lightly dredge them in the flour on both sides.
- Next heat a large pan on medium - high. Once hot add the oil and let it get hot.
- When the oil is hot add the fish and let them cook for 3 minutes, or until the one side browns. Depending on the size of your pan and the size of your fillets, you may need to cook these in batches.
- Then carefully flip them over and cook the other side for 3 more minutes, or until it browns and the fish is cooked through. Then remove them from the pan and place them on a plate.
- Next re heat the sauce if necessary and then pour it over the fillets. Garnish with the green onions and serve immediately. This is delicious served with white steamed rice and green beans, enjoy.
