Oven Roasted Cauliflower Recipe
Just like clothing, food goes in and out of style. Right now, cauliflower is all the rage – it is used for everything from pizza crust to pancakes and dozens of dishes in between. It is, however, at its best when served as a vegetable. The following Oven Roasted Cauliflower is a favorite; it's quick and easy to assemble, and roasts in the oven while the cook is busy doing other things. Once the cauliflower is crisp-tender, it's sprinkled with freshly grated Parmesan cheese and baked until the cheese is crisp and bubbly. Even though the recipe is designed to serve six people, one or two people will easily finish it without blinking an eye.
Even though cauliflower hasn't always been the most popular vegetable around, it may become a family favorite when it's prepared this way. There will definitely be no leftovers.

1/4 cup olive oil
2 tablespoons fresh lemon juice
3 cloves garlic, finely chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 pounds cauliflower, cut or broken into florets
1/4 cup freshly grated Parmesan cheese

1/4 cup olive oil

2 pounds cauliflower, cut or broken into florets
1/4 cup freshly grated Parmesan cheese
- Preheat oven to 450°.
- Line a large baking sheet with parchment.
- In a small bowl or MagicBullet, mix the olive oil, garlic, lemon juice, salt, and pepper.
- Place the cauliflower in a large bowl; toss with the olive oil mixture.
- Spread the cauliflower out in a single layer on the prepared baking sheet.
- Roast in the preheated oven 20 minutes.
- Remove from the oven, stir, sprinkle evenly with the Parmesan cheese, and return to the oven for 10-15 additional minutes until the cauliflower is crisp-tender and the cheese is melted.
