Tilapia with Vegetables Recipe
Most people don't eat nearly enough seafood! Get those healthy omegas into you with this delicious, low carb tilapia with vegetables recipe.

Tilapia with Vegetables Recipe
Ingredients:
1/2 cup green beans
1/2 cup yellow squash
1/2 cup green squash
1/3 cup carrots
4oz tilapia
olive oil
minced garlic
diced onion
salt
pepper
1/4 cup chardonnay
lemon juice

Start by cutting up the green beans, yellow squash, green squash, and carrots into bite-sized pieces. Steam it on the stove until it's mostly cooked.

Put them into a saute pan with salt, pepper, olive oil, and minced garlic. Give them a nice browning. Set aside.

Rub the tilapia in salt and pepper on both sides. Top it with diced onion and minced garlic. Get the pan medium-hot with olive oil, then add in the tilapia. Cook it 1-2 minutes on one side, then flip for another half a minute.

Add the veggies back in.

Add in the chardonnay wine and steam that off. Then add in a few drops of lemon juice right on the fish.

The wine has a steaming effect and will help the fish cool thoroughly without drying out. Be sure to check the fish by cutting into its center and making sure it cooks thoroughly. Different thicknesses of fish will cook at different rates.

Serve and enjoy!

This is a dish that you can vary wildly based on what combination of vegetables you use. If you're new on induction, ease up on the carrots. If you're deeper into maintenance, you can pile those on. The same with the green beans. The exact mix of veggies you choose to use will determine the overall carb count. You can even use a frozen veggie blend if you wish, and you'll know right from the packaging exactly what the carbs will be there.
