Microwave Sugar-Free Blackberry Jam Recipe
All-natural, sugar-free jam can be a wonderful part of a healthy diet. This recipe is for a microwave, easy version of blackberry jam.
Ingredients:
2 cups blackberries
2 Tbsp Stevia powder (or similar equivalent to 1/3 cup sugar)
2 Tbsp lemon juice
1/8 tsp salt
Put all ingredients into a LARGE microwave-safe mixing bowl and stir thoroughly. Cover and microwave on high for 3 minutes. Take out and stir. Microwave for another 3 minutes. Take it out and stir.
Now you're getting into the realm of how-hot-is-your-microwave. It's not going to end up yet thick like jam, but you don't want it a soup either. You want a medium consistency like a stew. So do shorter bursts now until it seems fairly stewy.
They're going to burble up from the bottom as they cook, so make sure your bowl is much larger than the berries themselves.
Now put them into the refrigerator overnight so they can set. That's when they'll thicken up!
Perfect for all sorts of uses.
Carb Values:
The main thing here is the blueberries, which are 21g per cup. So you wouldn't want to ingest the entire jar of jam in one sitting! You'd want to share it out with friends or portion it out each morning with your breakfast, for example. Or mix it into yogurt.
You can also do this with other berries if you'd like, to mix and match. See which flavor combinations you enjoy the most!
Blueberries are chock full of good nutrition, including oodles of Vitamin C. So they are a great food to add into your diet, as long as you eat them in moderation. Isn't that true or everything?
