French Shredded Carrot Salad Recipe
Sometimes “simple” is best, and that is definitely the case when referring to a favorite salad that is always available in the refrigerated salad section of the popular grocery store chain, Monoprix, in Paris (as well as most other Parisian grocery stores), Carrottes Râpées Vinaigrette Allégée. This simple salad, which consists of finely shredded carrots in a light French vinaigrette is refreshing, delicious, and a nice change from the ubiquitous green salad. French Shredded Carrot Salad is quick and easy to make; you can even purchase the shredded carrots in the produce department of some larger grocery stores. Otherwise, a food processor makes quick work of grating the carrots. The French vinaigrette takes about 5 minutes to make in the blender.
Even though the dressing calls for less than a teaspoon of mustard, the type of mustard used makes all the difference. If possible, use a Dijon that is imported from France, rather than an American brand. Most American Dijon mustard is very mild – actually bland and almost tasteless – compared to what is used in France. The salad also tastes best when the carrots are very finely grated, rather than coarsely grated. The salad can be made up to two days ahead, and makes a colorful contribution to almost any meal.

Dressing:
1 clove garlic, finely minced
3/4 - 1 teaspoon Dijon mustard
3 tablespoons red wine vinegar
1/4 cup olive oil
2 teaspoons sugar
1/4 teaspoon freshly ground black pepper, or more to taste
1/4 teaspoon sea salt
2 pounds grated carrots, (4 cups, packed)

- Place the dressing ingredients in a blender; Blend until well mixed.
- Place the shredded carrots into a serving bowl
- Toss with the dressing.
- Cover with plastic wrap and chill thoroughly before serving.
