Salsa Meatloaf

Salsa Meatloaf

Salsa and cheese give a zesty Mexican flavor to this tasty meatloaf.

  • 1 lb. lean ground beef
  • 1 egg
  • 3/4 cup bread crumbs
  • 1 cup salsa
  • 1/4 cup shredded Monterrey Jack, cheddar, or a mixture of both cheeses
  • salt and pepper to taste

Preparation -
In a large bowl, mix the ground beef with all the other ingredients. Use your hands or a large wooden spoon to mix everything into the ground beef. Shape the mixture into a loaf. Spray a loaf pan with non-stick cooking spray. Place the meatloaf in the prepared loaf pan. Bake in a preheated oven at 375º for 1 hour. Remove the pan from the oven and drain any fat from the bottom of the pan. Cover loosely with foil and let stand for about 10 minutes before slicing and serving.
