Stuffed Crust Pizza Appetizers

These filled triangle-shaped pizza pockets make great party appetizers. Serve warm with marinara sauce, for dipping, on the side. Makes 48 appetizers.

• 2 cans refrigerated pizza dough (from the dairy case)
• 1/2 lb. Mozzarella cheese - cut into 48 cubes
• 48 thin slices pepperoni
• 1/4 cup olive oil
• 1-1/2 tsp. Italian seasoning
• 2 tsp. grated Parmesan cheese
• marinara sauce

Preparation -
Spray a 9" x 13" baking pan with non-stick cooking spray; set aside. Remove the pizza dough from the cans and unroll it. Starting at center, press and spread each piece of dough into an 8" x 12" rectangle. From the 8" side, slice each rectangle into 4 strips. Slice each of the 8 strips into 6 pieces to form 48 small squares of dough. Top each dough square with one slice of pepperoni plus one Mozzarella cheese cube. Fold each square in half, diagonally, to form a triangle, completely covering the pepperoni and cheese. Press the edges of the dough together to close and seal each one. Place the filled, sealed dough triangles, seam side down, with sides touching, in the prepared 9" x 13" baking pan. Whisk the olive oil, Italian seasoning and grated Parmesan cheese together in a small bowl. Drizzle the seasoned olive oil mixture over the filled dough triangles. Bake in a preheated oven at 400º degrees for 15 to 20 minutes or until light golden brown. Place the pizza appetizers on a serving platter and insert a large toothpick in each one. Serve warm with marinara sauce, for dipping, on the side.
