Use your Thanksgiving Day dinner leftovers to make some great sandwiches and quick meals to satisfy your family and friends. By re-purposing your turkey, ham, cranberry sauce and adding a few classic sandwich ingredients, you will create some exciting and delicious next day meals.
Turkey Cranberry Wrap
Turkey meat, roughly chopped
Cranberry jelly
Romaine lettuce, chiffonade or chopped rough
Mayonnaise or aoili
red seedless grapes, halved
pine nuts or toasted walnuts, roughly chopped
Flour tortillas
Spread a little mayonnaise (or aioli) on the inside of one flor tortilla, leaving about 1/4 inch edge without mayonnaise.
Add two tablespoons of chopped turkey then, spread a tablespoon of cranberry sauce over the turkey. Add a few chopped nuts and several of the grape halves. Finally, add some of the chopped lettuce and fold the tortilla.
Repeat this process until you have several made wraps. Serve halved with extra mayonnaise and cranberry jelly for dipping.
Classic Ham Salad
2 cups ham, diced
1 1/2 cups cooked white potatoes, cubed
1 cup cheddar cheese, diced
3 hard boiled eggs, chopped
1/2 cup celery, chopped fine
1/2 cup pickle relish, sweet or dill to preference
1/2 cup cream cheese, softened
7 ounces canned corn or mexicorn, drained
4 oz pickled pearl onions, sliced
1/2 cup mayonnaise
1/4 cup sour cream
Salt and pepper, to taste
(2) Favorite French bread rolls
Mix together potatoes, ham, cheese, boiled eggs, corn and onion. In a separate bowl, mix mayonnaise and sour cream together. Add the mayo mixture to the ham/potato mixture and mix gently. Chill in refrigerator until you are ready to serve. At service, spread a generous amount of the mixture on the bottom half of a French bread roll and cover with roll top.
Some great ideas to change up the flavors of your ham salad are:
1. Try adding in one teaspoon of jalapeno or habanero relish for a spicy zing
2. Try adding in one can of drained black beans and eliminate the pickled onions. Be sure to use mexicorn and this combination gives a great latin hint to your ham salad.
3. Add in one teaspoon of chili powder and a dash of red pepper to your sour cream before adding to the ham salad mixture. This fiery kick will create interest without completing charring your guest's palates.
