Raspberry Buns (Irish)

Guest Author - Deborah Adams

1/2 lb. flour
2 oz. butter
1 tsp. baking powder
1 egg
A little milk
2 oz. sugar
raspberry Jam
pinch of salt

Sieve flour, salt, and baking powder into a bowl. Rub in the butter. Add sugar; mix thoroughly. Mix to a loose dough with beaten egg (keeping back a little) and sufficient milk, using a wooden spoon. Turn onto a lightly floured board. Form into a roll. Divide into 10 portions. With floured fingers, make a hole in the center of the cut side of each piece. Drop about 1/4 teaspoon jam into the center and draw the edges of the dough over, completely covering the jam. Brush over lightly with beaten egg. Sprinkle a little coarse sugar on top of each. Lay on a greased tin. Bake in a hot oven 15-20 minutes. Cool on a wire tray
