Indonesian Kabobs with Peanut Sauce

Guest Author - Deborah Adams

1 1/2 lb. flank steak strips, chicken breast strips and/or cleaned shrimp
Assorted vegetables, cut in bite-size pieces
1/3 c. soy sauce
1/3 c. lemon juice
1/3 c. packed light brown sugar
1/3 c. chunky peanut butter
3 tbsp. peanut oil
4 tsp. onion powder
1 tsp. garlic powder
1/8 tsp. crushed red pepper

Skewer meat, chicken and/or shrimp. Skewer vegetables separately. Place in a single layer in shallow casserole. Process remaining ingredients in blender or food processor until smooth. Reserve 13 cup marinade for dipping sauce. Pour remainder over kabobs, turning to coat evenly. Refrigerate, covered, at least 30 minutes. Broil or grill 8 to 10 minutes or until desired doneness. Serve with reserved marinade. Makes 6 servings.
