Grilling season is here and we all look forward to the delightful treats fresh off the grill! Nothing can compare to outdoor picnics for summer fun. Adding some chilled creations will help you and your guests forget about the heat. Ice Cream, popsicles and ice-cold watermelon are great ways to cool down after a picnic or cookout. You can also add an element of fun to your event. Try having a watermelon-eating contest or pinata bashing with candy treats inside will thrill the children on your guest list. Small children love to hold their food so adding finger foods such as vegetable and cheese sticks, corn on the cob pieces, chicken sticks or nuggets and fresh fruit will assure that they too will have a great selection at your next picnic or cookout.

Below are some recipes enjoyed at my home in the summer grilling season that I would like to share with you. I hope you enjoy your summertime grilling with some of the ideas I have presented here. Have fun and come back often for more ideas here at Bella Online!
Grilled Onions in foil packets
4 large sweet onions, butter, salt and pepper to taste
Clean, peel and core onions, leaving a cavity about 1 inch wide and almost through to the bottom of the onion.
Salt and pepper the cavity and put a little butter inside the onion. Salt and pepper the outside of the onion and
Wrap in aluminum foil with the ends twisted tightly. Cook in a covered grill approx. 15 minutes over medium coals.
Open foil and let cook a few minutes more for an authentic grilled flavor.
Grilled Teriyaki Chicken
4 - 6 chicken breast halves, 1 c. teriyaki sauce, 2 TBSP. lemon juice, 2 tsp. minced garlic, 1/8 t. black pepper
Place all in a resealable plastic bag and seal shut. Shake to coat chicken pieces and place in refrigerator for at least 24 hours, turning occasionally.
Preheat grill to high heat.
Lightly oil grill grate and place chicken pieces on grill. Cook for 6 to 8 minutes on each side or until juices run clear when pierced with a fork.
Red Potato Salad
3 lbs. red potatoes, 1 white onion, chopped, 3 celery stalks, chopped, 3 strips of bacon, cooked and crumbled, 1/4 c. black olives, chopped, 2 TBSP. sweet relish.
8 oz. Ranch dressing or dressing of your choice.
Boil unpeeled potatoes until tender. Cool. Cut into 1/2-inch cubes and place in large mixing bowl. Add the rest of the ingredients and mix carefully to combine. Chill before serving.
