Spicy Thai Rice

Serve spicy Thai rice with sugar snap peas or snow peas.

2 1/4 cups water

1 cup uncooked USA long grain white rice

1/4 cup chopped green onions

1 to 2 fresh red chiles, seeded and chopped

1 tbsp chopped fresh cilantro

1 tbsp butter

2 tsp minced fresh gingerroot

1/2 tsp salt

1/8 tsp turmeric

2 tsp fresh lime juice

Directions

1. In medium saucepan, combine water, rice, onions, chiles, cilantro, butter, gingerroot, salt and turmeric. Bring to a boil; stir once or twice. Reduce heat; cover and simmer for 15 to 20 minutes or until rice is tender and liquid is absorbed.

2. Stir in lime juice; fluff with fork.

Garnish with roasted peanuts (Planters) and pepper flakes, if desired.

Serves 4
