Quick & Easy Skinny Slaw Recipe
Outdoor barbecues, picnics, and cookouts usually call for lots of summer salads, and coleslaw is always one of the most popular. The problem, however, with good coleslaw, is the prohibitive amount of fat and calories in most of the recipes, especially those with dressing that is mayonnaise-based. Of course there are lots of so-called “light” recipes, but they always taste like they are lacking something. Quick & Easy Skinny Slaw is one coleslaw that will fool everyone. It has plenty of flavor, plenty of crunch, and plenty of dressing (the element of most salads that make them prohibitive calorie wise), but is only 79 calories per serving with just two grams of fat. This is a great salad for those who try to maintain a summer bikini body, and is also a great salad for those who don’t. It starts with packaged coleslaw mix and requires only a quick chopping of kale; the dressing can be put together in about 5 minutes.

8 Servings


1 14 - 16 ounce package coleslaw mix, preferably with carrots and red cabbage for color
1/2 to 1 cup baby kale, finely diced (regular kale is also okay as long as it is very finely chopped)

Dressing:
1/4 cup light mayonnaise
1/4 cup nonfat yogurt
1/3 cup sugar
1/3 cup skim milk
2 tablespoons red wine vinegar
1 teaspoon Sriracha Hot Chili Sauce
1/2 teaspoon dry mustard
1/2 teaspoon salt
1 teaspoon dehydrated onion flakes
  1. Mix the coleslaw mix and kale in a large serving bowl.
  2. Pour the dressing over and toss.
  3. Refrigerate an hour before serving if you have time, but it can be served immediately if necessary.
  4. Dressing: Mix the dressing ingredients in the blender or MagicBullet until smooth (or whisk ingredients together in a bowl).
