Looking for a frozen dinner to pop in the microwave for lunch or dinner that's also low carb? I've found that Mike's Low Carb Gourmet dinners are delicious!

I admit I was VERY doubtful that these would be any good. Most frozen dinners are tolerable but not really delicious. I used to live on frozen dinners, too, before I went low carb so I'd probably tried them all. Mike's was not cheap, either. If you buy this dinner online, you can pay up to $8 *per dinner*.

Still, I brought home a Roasted Creole Salmon with Cajun sauce to try out. It had salmon with a rich sauce, spinach, broccoli pieces and button mushrooms. I popped it in the microwave for 6 minutes and let it sit for two. Then I peeled off the plastic which was VERY flimsy and broke into little pieces. I was figuring this was just not going to work.

But when I took that first bite, WOW was I amazed! The sauce was incredibly rich and delicious. The salmon was perfect. The spinach was tasty, and the mushrooms were flavorful, soaking up that sauce. I mopped up every last bit.

The salmon has 8g of carbs in it, so the carb count is quite low for a full meal. The other dinners in the set range from 7g carbs (oriental chicken stir-fry) to 16g carbs (eggplant lasagna). Not great for induction people, but for most of us who are on 50-60g for a full day, this is excellent for a full lunch or dinner.

I would never advocate living on processed foods as a normal meal plan - they're just not as good for you in any way when compared to fresh meals you make yourself! You're getting almost 40% of your daily sodium intake with this one box. But for something to keep in the freezer as a backup plan, this certainly fits the bill. Where other frozen dinners are a "I guess this will do" tolerable alternative, with Mike's it's more like a special treat!

Sadly, this food was too good to last. In 2009 their website had this notice: "Unfortunately, LifeStyle Gourmet has been forced to abandon operations. Expiration of our products and substantially decreased sales volume do not justify further production runs at this time. We do thank those of you who have enjoyed our products since 2003 for your support."
