Spicy Yogurt Peanut Sauce for Fries*
This recipe makes enough for ten servings of Fries or potato wedges. If you make potato wedges. Parboil whole potatos in their skin until they are fork soft. Then cut into wedges, spray with cooking oil, add a sprinkle salt and place in a hot oven until golden brown.
1/2 cup plain yogurt
1/2 cup chunky peanut butter
1 tablespoon soy sauce
1 tablespoon lemon juice
2 teaspoons finely chopped, peeled ginger root
1 to 1/2 teaspoons crushed red pepper

1. In food processor or blender, process yogurt, peanut butter, soy sauce, lemon juice, ginger root and red pepper until smooth, pulsing on and off. Place in a small bowl. Cover and chill until ready to serve. Serve with fries or potato wedges.
Makes about 1 1/4 cups. Serving Size equals 2 tablespoons.
